Sloppy Josephine Vegan

This is one of my favorites when it comes to a quick dish that even kids like. Easy to prepare and good for you.
I like it a little spicy, but it can be served the same as the regular Sloppy Joe but with less fat.
You can reduce or increase this recipe with no change in taste.

Serving Size: 6
· 1 sm Onion, chopped
· 2 shallots
· 6 ea Garlic cloves, minced
· 1 med. Bell pepper
· 1 tbsp olive oil
· 6 Crimini Mushrooms, chopped (can use Reg. Button mushrooms instead)
· 1 lb organic Tofu, crumbled (freeze prior to using)
· 3 tsp Tamari or to taste
· 1 small can organic tomato paste
· Optional – Hot sauce – the liquid kind
Sauté onion, shallots and garlic in oil until they are translucent. Then add bell pepper and mushrooms and continue to cook for another 3-5 minutes.
Add defrosted crumpled tofu, tamari and tomato paste. Continue to heat all ingredients over medium heat until heated thoroughly heated. About 5 minutes
Put on top of either toasted whole-wheat buns or English muffins. Top with soy cheese then put under broiler until melted. Enjoy
